Traeger Grill Queen Snapper & Wahoo
Simple fish recipe that never disappoints. One of our clients from a fishing charter caught more fish then he could handle so it worked out for the fishing captain. This recipe calls for fresh whole Queen Snapper and Wahoo fillets. Queen snapper has a sweet fresh taste that will remind you of a blue crab boil. Cooking the fish on the Traeger will keep the fish moist and give is a nice wood oven flavor.
Ingredients:
whole queen snapper
wahoo fillets
Blackening seasoning ( we prefer Redfish Magic )
Old Bay
olive oil
First, coat Queen Snapper in Old Bay and the Wahoo in a blackening seasoning. Then add a bit of olive oil to a cast iron and pan sear both fish at med high for 25 seconds on each side. Remove from heat and transfer to a the preheated Traeger. Cook / smoke for apx 18 minutes or until internal temp reaches 135 degrees. Enjoy.
